I absolutely love taking long walks with my six dogs and because the surrounding hills and forests are jam packed with wild herbs I often take a bag and some secateurs to aid me in my inevitable foraging.
Rosemary is so ubiquitous its easy to forget that it is an invaluable source of nutrients and that it is a powerful medicine both anti-oxidant and anti-inflammatory. Rosemary can help boost your immune system and improve blood circulation, as well as firing up your brain to improve memory, alertness, intelligence and focus! Not to mention it smells and tastes great!
Rather than just drying it I like to preserve rosemary for year round use by making my own rosemary salt. Rosemary salt is exactly what it says it is, it is rosemary (chopped) mixed with rock salt. I use it in soups, stews, on meats, and most addictively with roast potatoes.
The benefit of this method is that the salt becomes infused with the flavour and aroma of rosemary and makes it easier to transfer that delicious savoury taste to your cooking. It is so disappointing when you use expensive shop bought dried herbs in your cooking and they add little or no flavour. That wont happen with this strongly scented rosemary salt!
How to make.
- Harvest wild rosemary and separate out all the green leaves from the woody sticks and stems.
- Either finely chop the leaves or run them through your food processor until they are in small pieces.
- Mix one cup rosemary with four cups rock salt.
- Store in an airtight container.

We try to produce as much of our own food as possible and sometimes we produce food in such an abundance that we have enough to share with you. This year was a wonderful year for rosemary because it was so dry and every time I go out with the dogs I come back with another bag full to the brim.
